Meat Loaf


Ingredients:

1 1/2 pound of ground beef
3/4 cup oats (uncooked)
2 eggs beaten
1/4 cup chopped onions
2 teaspoons salt
1/4 tablespoons pepper
1 cup tomato juice

Instructions:

Combine all ingredients and pack firmly into pan.
Bake at 350 degrees for 1 hour.


Slap Yo Momma' Meatloaf


Ingredients:

1 Family pack ground beef
1/2 large onion, chopped
1 bell pepper, large
3/4 of a small can of evaporated milk
2 eggs
1 1/2 packages of crackers
A-1® Sweet and Tangy Steak sauce
1 small can tomato sauce
1/2 bottle of ketchup


Glaze:
1/3 cup Dark Karo® Syrup
1/2 cup Ketchup
1/4 cup Brown Sugar


Instructions:

Place ground beef in large bowl.
Add chopped onion and bell pepper.
Pour in a whole bottle of A-1® Steak sauce, 1/2 medium bottle of ketchup, 1 small can tomato sauce.
Beat 2 eggs in cereal bowl and add enough evaporated milk to fill bowl.
Pour in meatloaf mixture and mix with hands thoroughly.
Add enough crackers to make the mixture stick together.
Recipe makes 2 large loaves, so you may split and freeze half.
Mold meat into a loaf in a roaster or similar deep dish pan.
Bake at 350-375 degrees for about an hour and a half, or until it appears to be done.
You may also drain some of the juice off of the loaf before you top with glaze, but not too much because it will result in a dry meatloaf.
Mix glaze ingredients in equal parts or to taste and cover meatloaf with it.
Bake uncovered until coating is cooked. Slice and serve.

Comments: Now, Slap 'yo momma if this meatloaf ain't the bomb!!!!


PNinety's Meatloaf


Ingredients:

2 pounds ground beef
1 large onion
1 bell pepper
3 eggs
1 large can carnation milk
18 oz ketchup
black pepper
corn flakes (1 handful)

Instructions:

Preheat oven 350 degrees F.
Put beef in a bowl.
Cut up onion and bell pepper, then add to beef.
Add eggs and 3/4 of ketchup and black pepper to taste.
Crush a handful of cornflakes, add and mix well.
Then add milk, mix and shape into a loaf in a pan.
Bake until done, approximately 1 hour 20 minutes.
Spread the remainder of the ketchup on top of the meatloaf.
Bake another 10-15 minutes.


Steak Casserole


Ingredients:

2 pounds round steak (cubed)
1 can chicken & rice soup
1 can cream of mushroom soup
3 tablespoons soy sauce
1 can evaporated milk

Equipment:

Frying pan
Medium-sized casserole dish
Large bowl
Measuring spoons

Instructions:

Preheat oven to 350 degrees F.
Roll steak in flour.
Brown steak in the frying pan.
Place the steak aside to drain the excess grease.
Mix the remaining ingredients in a large bowl.
Place the steak in the greased casserole dish.
Pour the ingredients from the bowl over the steak.
Cover the dish with foil.
Place the dish in the oven for 1 ½ to 2 hours. (Remove the foil the last 15 minutes.)
Serve over a bed of rice.

Meatball Soup


Ingredients:

1 1/2 pounds ground beef
2 cups freshly grated parmesan cheese
2 eggs
1 cup seasoned bread crumbs
1 tablespoon chopped parsley
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
2 1/2 quarts water
1 cup thinly sliced carrots
1 cup sliced celery
1-2 cups escarole (chopped)

Instructions:

To make meatball, combine ground beef, 1 cup parmesan cheese, the eggs, bread crumbs, parsley, mustard, salt and pepper.
Blend well, form into very small meatballs, and refrigerate 1 hour to blend flavors.

Bring water to a boil.
Add onions, carrots, celery, escarole, meatballs, salt and pepper to taste.
Simmer 1 hour, or until meatballs are done.
Serve in tureen; sprinkle with remaining 1 cup parmesan cheese.

Comments: Serve very hot, so the cheese will melt on top.
Serves 5 to 10

Bar-B-Que Meat Loaf


Ingredients:

2 lbs.ground beef (lean if possible)
1 cup of bread crumbs(fine)
1 egg
1/2 cup bar-b-que sauce(your choice)
(use a salt substitute) suit to taste
2 pinches of black pepper(1/4 teaspoon) suit to taste
2 pinches of cayenne pepper(1/4 teaspoon) suit to taste
1 clove garlic minced (finely chopped)
1/4 cup chopped onions(red onion if possible)

Instructions:

Combine all ingredients, shape(mold) meat, place in baking dish.
Bake at 275 degrees (gas) [350 degrees (elec)] for about 1 hour & 15minutes covered.
Remove from oven, drain excess fat and serve with your favorite side dish.

Uncle Raive's Calves Liver Casserole


Ingredients:
2 packages of calves liver
1-8oz package mild cheddar cheese (grated)
1 large onion sliced
Success® rice
canola oil
self-rising flour
McCormick® Seasoned Salt
garlic Powder
black pepper


Instructions:
Rinse liver and allow to drain.
Measure oil to a depth of 1-inch.
Season liver to taste with seasoned salt, black pepper, and garlic salt.
Roll dredge seasoned liver in self-rising flour.
Heat canola oil in a frying pan.
Brown liver and set aside to drain on paper towels.
Pour oil from the frying pan, leaving 1 tablespoon of oil and pan drippings.
Brown 2 tablespoons of flour in the pan drippings.
Add 1 cup of water and sliced onions.
Cook until liquid has thickened and onions have softened.
Cook rice in salted water.
Drain rice and stir in gravy.
Cut liver into bite-size pieces. Add to rice mixture.
Pour liver- rice mixture into a 10-inch casserole dish.
Top with cheese.
Place in preheated oven at 350 degrees F.
Bake until cheese has melted.

Serve warn from the oven.



Michelle's Good Ole Meatloaf


Ingredients:

1 pound ground chuck
1 large yellow onion (chopped)
3 pieces of green onions
1 large bell pepper (chopped)
1/4 cup of Italian breadcrumbs
1 cup of salsa
2 large eggs
1 tablespoon oil

Instructions:

Combine all ingredients together in a large bowl.
Mix well, but not too much because the meatloaf will be overworked.
Place all ingredients in a loaf pan and bake on 375 F until done.
Pour off grease and top with additional salsa.
Bake for about 10 minutes.

Comments: I use ground chuck because it is lean, but I've also tried it with ground turkey and my family loved it just the same.
